Pasta with Spinach and Mushrooms

- Olive oil - 1 tsp
- Champignons - 30 g
- Sun-dried tomatoes - 30 g
- Spinach - 50 g
- Garlic - 1 clove
- Almond milk - 1/3 cup
- Parsley - 10 g
- Salt and pepper - to taste

Instructions
Step 1 of 7
Cook the pasta in salted water according to the package directions. Drain and set aside.

Step 2 of 7
Cut the mushrooms into medium-sized slices.

Chop the spinach, sun-dried tomatoes and finely chop the garlic.

In a hot frying pan with oil, fry the mushrooms until golden brown.

Step 5 of 7
Add the spinach, sun-dried tomatoes and garlic and continue to fry over medium heat for 1-2 minutes.

While the pan is still on the heat, add the cooked pasta.

Pour the almond milk into the pan and continue to cook for 1-2 minutes, stirring constantly.
