Stewed Zucchini with Rice and Vegetables

Ingredients
- Zucchini - 1/2 pc.
- Rice (boiled) - 150 g
- Carrots - 1 pc.
- Onions - 1/2 pc.
- Tomato - 1 pc.
- Bell pepper - 1/2 pc.
- Salt and pepper - to your taste
- Olive oil - 1/2 tsp.

Instructions
Step 1 of 10
Cut the zucchini into quarters.

Step 2 of 10
Peel the carrots and cut into strips.

Step 3 of 10
Finely chop the onion.

Cut the bell pepper into cubes

Chop the tomato.

In a heated frying pan with oil, fry the onion and carrot until golden brown for 3-4 minutes.

Add the bell pepper and zucchini, continue cooking for another 3-4 minutes, stirring constantly.

Season salt and pepper to taste. Add the chopped tomato.

Pour in some water, simmer over low heat under the lid for 10 minutes.

Add boiled rice to the stewed vegetables, mix all the ingredients and heat for 3 minutes.
