Stuffed Baked Sweet Potatoes

Ingredients
- Sweet potato (small) - 1 pc.
- Chicken breast - 100 g.
- Cherry tomatoes - 5 pcs.
- Red onion - 1/2
- Bell pepper - 1-2 pcs.
- Lemon (zest) - 1 pc.
- Pickled feta cheese 35% - 20 g.
- Parsley - bunch
- Garlic powder - 1/2 tsp.
- Tomato paste - 1 tbsp.
- Balsamic vinegar - 1 tbsp.
- Olive oil - 2 tsp.
- Salt and pepper - to your taste

- Sweet potato (small) - 1 pc.
- Chicken breast - 100 g.
- Cherry tomatoes - 5 pcs.
- Red onion - 1/2
- Bell pepper - 1-2 pcs.
- Lemon (zest) - 1 pc.
- Pickled feta cheese 35% - 20 g.
- Parsley - bunch
- Garlic powder - 1/2 tsp.
- Tomato paste - 1 tbsp.
- Balsamic vinegar - 1 tbsp.
- Olive oil - 2 tsp.
- Salt and pepper - to your taste
Instructions
Step 1 of 14
Coat the sweet potatoes with olive oil and salt.

Step 2 of 14
Place the sweet potatoes in a preheated oven at 200 degrees. Cook until the potatoes are soft inside.

Fry the chicken in a preheated frying pan with oil. Once ready, set aside to cool.

Cut chicken into thin pieces.

Cut the red onion into half rings and the bell pepper into strips.

Cut the cherry tomatoes into two halves.

In a preheated frying pan, fry the onion, add bell pepper and cherry tomatoes. Cook until vegetables soften.

Add the previously chopped chicken to the vegetables.

Add tomato paste and pour some water into the pan. Mix all ingredients.

Add balsamic vinegar and continue cooking over low heat until the sauce thickens. When ready, set aside.

Finely chop the parsley and mix with the cheese.

Add the lemon zest and stir the resulting mixture.

Cut open the baked sweet potato and open it. Add cooked chicken with vegetables inside.
